Ingredients
  

For the cake
  • 2 cups all-purpose flour Sifted before measuring.
  • 1 tbsp baking powder Ensure it's fresh for proper rise.
  • 1/2 tsp salt Enhances flavor.
  • 1/2 cup unsalted butter Softened at room temperature.
  • 1 cup granulated sugar For sweetness and texture.
  • 3 large eggs Room temperature for better mixing.
  • 1 tbsp vanilla extract Adds depth to flavor.
  • 2 tbsp fresh lemon zest For intense lemon flavor.
  • 1/4 cup fresh lemon juice Use freshly squeezed for best results.
  • 1/2 cup milk or buttermilk Buttermilk is preferred for softer texture.
For the lemon glaze
  • 1 cup powdered sugar Sifted for a smooth finish.
  • 2 tbsp fresh lemon juice Use fresh for bright flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and lightly dust with flour or line with parchment paper.
  2. Gather all ingredients and make sure butter, eggs, and milk are at room temperature.
Mix Dry Ingredients
  1. In a medium bowl, whisk together flour, baking powder, and salt until well combined. Set aside.
Cream Butter and Sugar
  1. In a large mixing bowl, beat softened butter with granulated sugar until pale and fluffy.
Add Eggs and Lemon
  1. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, and lemon juice.
Combine Mixtures
  1. Gradually add the flour mixture alternately with milk, mixing until just combined.
Bake
  1. Pour the batter into the prepared pan and smooth the surface. Bake for 30-40 minutes until golden and a toothpick comes out clean.
Prepare the Glaze
  1. Whisk together powdered sugar and lemon juice until smooth.
Glaze and Serve
  1. After the cake cools for 15-20 minutes, drizzle the glaze over the top. Allow to set before slicing.
  2. Serve with fresh berries or whipped cream if desired.

Notes

For best flavor, use fresh lemons. This cake can be made ahead and becomes more flavorful overnight.
