Preparation
- Pat the steak dry with paper towels, then cut it into evenly sized bite-sized cubes.
- Season the steak pieces with kosher salt, black pepper, smoked paprika, and garlic powder. Let rest for 5-10 minutes.
Cooking the Steak Bites
- Heat a large skillet over medium-high heat and add olive oil and part of the butter.
- Sear the steak bites in batches until browned on all sides, about a few minutes per side, then transfer to a plate.
Making the Sauce
- In the same skillet, add the remaining butter and garlic. Cook until fragrant, but do not brown the garlic.
- Pour in the beef broth, scraping the bottom of the pan to release browned bits. Add heavy cream and stir until combined.
- Simmer the mixture until it begins to thicken slightly, then reduce heat and whisk in Parmesan cheese until melted and smooth.
Finishing the Dish
- Add the cooked steak bites back into the skillet and toss until coated with the sauce.
- Sprinkle with fresh parsley and serve immediately over your choice of side.
Notes
Serve over creamy mashed potatoes, pasta, or roasted vegetables. Avoid reheating the steak on high heat to keep it tender.
