Ingredients
  

Crust
  • 1 cup finely crushed graham crackers or vanilla wafers Can also use digestive biscuits.
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
Cheesecake Filling
  • 24 oz full-fat cream cheese, softened Should be at room temperature.
  • 1 cup granulated sugar
  • 3 large eggs Add one at a time to avoid air pockets.
  • 1/2 cup sour cream or heavy cream Adds richness.
  • 1 tbsp pure vanilla extract
  • 1 pinch salt
Cinnamon Swirl
  • 1/3 cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted
  • 1 tbsp all-purpose flour To thicken the mixture.
Vanilla Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk Add more for a thinner glaze.
  • 1 tsp pure vanilla extract

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. Lightly grease a 9-inch springform pan or line the bottom with parchment paper.
  3. In a medium bowl, combine finely crushed graham crackers with melted butter and sugar. Press into the bottom of the pan.
  4. Bake for 8 to 10 minutes, then cool.
Cheesecake Filling
  1. Beat softened cream cheese in a large bowl until smooth, then gradually add sugar.
  2. Add eggs one at a time, mixing on low speed.
  3. Stir in sour cream, heavy cream, vanilla, and salt until smooth.
Cinnamon Swirl Preparation
  1. Combine brown sugar, cinnamon, melted butter, and flour in a small bowl.
Assembly
  1. Pour half the cheesecake filling over the cooled crust.
  2. Spoon portions of the cinnamon mixture over the filling and gently swirl.
  3. Add the remaining cheesecake batter, repeat with cinnamon mixture and swirl.
Baking
  1. Bake until the edges are set but the center jiggles slightly.
  2. Turn off the oven, crack the door, and cool for one hour.
Chilling
  1. Chill the cheesecake for at least 6 hours, preferably overnight.
Glazing and Serving
  1. Whisk together powdered sugar, milk, and vanilla for the glaze.
  2. Drizzle over the chilled cheesecake before serving.
  3. Slice with a hot knife for clean cuts and garnish if desired.

Notes

Allow cheesecake to chill overnight for best flavor and texture. Top with garnishes for a special touch.
