Ingredients
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (preferably Italian)
1 cup grated parmesan
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon of salt
1/2 teaspoon black pepper
2 cups marinara sauce
2 cups grated mozzarella cheese
1/4 cup chopped fresh parsley (optional)
Olive oil for frying
Instructions
Step 1: Prepare the Chicken
Preheat your oven to 375°F (190°C).
Butterscotch or pound the chicken breasts until they are uniformly thick, about 1/2 inch.
Step 2: Set up the breading station
Put the flour in a shallow dish.
In another shallow plate, beat the eggs.
In a third dish, combine the breadcrumbs, parmesan, garlic powder, dried oregano, salt and
pepper.
Step 3: Bread the Chicken
Dust each chicken breast in flour, shaking off excess.
Dip the floured chicken into the beaten eggs, making sure it is completely coated.
Press chicken into breadcrumb mixture, coating both sides thoroughly.
Step 4: Fry the Chicken
Heat a large skillet over medium heat and add enough olive oil to cover the bottom.
Fry the breaded chicken breasts until golden brown on both sides, about 3 to 4 minutes per side. Work
in batches if necessary to avoid overcrowding the pan.
Transfer the fried chicken to a paper towel-lined plate to drain excess oil.
Step 5: Assemble the Dish
Spread 1 cup marinara sauce on the bottom of a baking dish.
Place the fried chicken breasts on top of the marinara sauce.
Pour remaining marinara sauce over chicken.
Sprinkle a generous amount of mozzarella cheese over each chicken breast.
Step 6: Bake
Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted and bubbly, and the
the chicken is cooked thoroughly (internal temperature should reach 165°F or 74°C).
Step 7: Serve
Garnish with chopped fresh parsley, if desired.
Serve hot, with pasta, salad or your favorite side dishes.
